Bayin Char-grilled Tuna with Chilli Salsa

4 tuna steaks (c. 175g each)
grated rind and juice of 1 lime
2 tbsp Bayin Peanut Oil
salt and pepper
fresh coriander to garnish

For the Chilli Salsa
2 orange peppers
1 tbsp Bayin Sesame Oil
juice of 1 lime
juice of 1 orange
2-3 fresh red chillies chopped
pinch of cayenne pepper


1. Place tuna steaks in a shallow dish and sprinkle with lime rind and juice. Pour in Bayin Peanut Oil. Season to taste with salt and pepper. Cover and leave to marinate in refrigerator for 1 hour.
2. To make chilli salsa, brush peppers with Bayin Sesame Oil and cook directly over gas flame turning frequently for 10 mins. If you don't have a gas stove roast peppers under the grill on a high heat for 10 – 15 mins. Remove from heat and leave to cool before peeling off skins.
3. Put peppers into blender with remaining salsa ingredients and process to a purée. Transfer to bowl and season to taste.
4. Preheat a ridged grill pan over high heat. Oil the pan using Bayin Peanut Oil. Add tuna steaks to pan and cook for 4- 5 minutes on each side until golden. Garnish with coriander and serve with chilli salsa.
