Bayin Chickpea Curry

6 tbsp Bayin Peanut Oil
2 onions sliced
1 tsp fresh ginger peeled and finely chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp garlic crushed
1 tsp chilli powder
1 tsp turmeric
1 tsp smoked paprika
2 fresh green chillies finely chopped
bunch of fresh coriander chopped
300ml vegetable stock
1 large potato
400g tin chickpeas
400g tin tomatoes
1 tbsp lemon juice


1. Heat Bayin Peanut Oil in large pan. Add onions and cook until golden. Reduce heat, add ginger, ground cumin, ground coriander, garlic, turmeric, smoked paprika, chilli powder, green chillies and coriander leaves (reserving some coriander for garnish). Stir fry for 2 mins. Add stock and mix well.
2. Dice potato and add to pan with chickpeas and tomatoes. Simmer for 15-20 mins.
3. Sprinkle with lemon juice and remaining coriander. Serve hot.
